Four Seasons Resort and Residences Vail is celebrating the summer season with a slate of refreshed dining, beverage and activity offerings that run through the remainder of the summer. The resort’s Tavernetta Vail, operated by the James Beard Award–winning Frasca Hospitality Group, has introduced new summer offerings including a weekend Sunday brunch. The brunch menu presents classic favorites reimagined with an Italian influence: lemon ricotta pancakes, pizzelle waffles, creamy polenta with eggs and sausage, and a distinctive take on chicken and waffles called pollo e waffle. A signature tableside mimosa service adds a special touch—servers press fresh orange juice on the spot and top it with prosecco from the restaurant’s Mimosa Cart.

Tavernetta also rolled out Après‑Tivo, an après-ski–inspired approach to the Italian aperitivo tradition for summer evenings. The Après‑Tivo menu centers on small, shareable plates paired with refreshing cocktails, encouraging relaxed social dining. In a playful nod to historic Italian wine windows, guests can also order from the restaurant’s Spritz Window for a quick, curated cocktail experience to enjoy on the terrace or take along for an outdoor stroll.

The Remedy, the resort’s lively bar program, has curated a Highland Harvest dinner series that highlights Colorado’s summertime produce and artisanal ingredients. Each dinner is a three-course meal paired with wines chosen to complement the seasonal menu. The series runs through late August, with the final dinner of the season scheduled for Aug. 27.

The Remedy also offers immersive cocktail programming, including a Mountain High Cocktail Class on Aug. 28. During this hands-on session, participants learn techniques for preparing two distinct cocktails paired with small bites. Each guest departs with printed recipes and a take-home kit that includes a supplemental cocktail component and a spirit bottle—making it easy to recreate favorites at home.
