His approach balances bold flavors and live-fire techniques with simplicity, allowing each ingredient to shine.

Ajax serves breakfast, lunch, brunch and dinner with menus that showcase seasonal, local ingredients. Breakfast offerings might include a duck hash, while lunch could feature a chili-smoked pork sandwich with roasted pepper, kosho aioli and rosemary fries. Dinner selections vary by season and might include short rib cannelloni with caramelized onion, horseradish crème and fernet demi, or coal-roasted beets paired with Humboldt Fog goat cheese and pine nut gremolata.

Chef Becker highlights local produce he loves to work with—mokum carrots, badger flame beets, kohlrabi and peak-season tomatoes. He praises Colorado tomatoes when they come into season and values the vibrant color and versatility of the carrots and beets, which allows the kitchen to prepare multiple applications and keeps them as staples on the menu.

Just a short walk from the hotel, Denver’s Union Station adds dining, shopping and convenient transport options, including direct bus and train links to Denver International Airport. The Museum of Contemporary Art is a block away, and hotel guests enjoy complimentary access.
