Atop the hotel, the award-winning rooftop bar and restaurant Frolik Kitchen + Cocktails has refreshed its leadership team. Laura Simpson-Eng joins as executive chef, supported by food and beverage director Max Messmer and bar manager Chris Blakeslee. Together they bring renewed energy and new menu ideas that highlight Pacific Northwest ingredients and contemporary techniques.
The restaurant’s offerings draw on regional flavors with inventive preparations. Breakfast selections include indulgent items such as Foie French Toast—brioche soaked in a bourbon custard, paired with seared foie gras and blackberry compote. Dinner features dishes like Berbere Roasted Hen of the Woods, served with Brussels sprouts, crispy chickpeas and a muhammara-style red pepper and walnut blend, showcasing a balance of spice, texture and roasted savory notes.
Frolik’s beverage program has also been expanded. The cocktail menu includes both approachable seasonal drinks and an extravagant “Millionaires Menu” of showpiece libations. These high-end cocktails offer theatrical presentation and premium ingredients, with selections priced at specialty levels to match their rare components and presentation.
