Maison Chaudun’s hallmark is the pavé: a small square of velvety ganache finished with a dusting of bitter cocoa. The pavé showcases a balance of refinement and simplicity—fresh, melting chocolate that blends seamlessly with the cocoa coating. Each ganache is crafted from a blend of three chocolates combined with whipped cream, then aged for 24 hours. After being cut into small squares with a guitar cutter, the pieces rest another 24 hours before receiving their cocoa finish. The chocolates are made naturally, without preservatives, artificial additives or unnecessary sugars.

Available exclusively at the Mandarin Cake Shop, Maison Chaudun pavés are offered in gift-ready boxes: nine pavés for HKD 198 and a larger box of 25 pavés for HKD 558.
