Led by Chef Adam Smith, Woven will showcase dishes rooted in classic flavors but presented with contemporary flair. Smith emphasizes seasonal, high-quality ingredients sourced from Britain’s larder: fresh seafood, expert butchery, foraged mushrooms, hand-picked herbs and native flowers. Menus will evolve with the seasons to highlight the best available produce.
The beverage program complements the food and the surrounding landscape. Woven’s cocktail list focuses on seasonal creations that reflect the hotel’s pastoral setting, while the wine selection includes a range of English and international options chosen to pair with the changing menus.
“A memorable dining experience is created by so much more than the dishes that we eat. With Woven, we will be pushing the boundaries of creativity and excellence in food, but also in drinks, service and design to create a restaurant that delights both destination diners and hotel guests alike,” said Smith. “Stories and knowledge from my entire career, alongside inspiration from the idyllic landscape, will be woven into the menus, and the dishes, whilst refined, will be presented in playful and contemporary ways. Woven has been many years in the making, and we cannot wait to welcome our first guests.”
Set within Coworth Park’s tranquil grounds, Woven aims to be both a destination restaurant for visitors to the area and a refined dining option for hotel guests. With its focus on seasonal ingredients, creative presentation and an inspired drinks list, the new restaurant is positioned to become a highlight of the property’s culinary offerings.
