Laucala Island Welcomes Executive Chef Anthony Healy for Island Dining Experience

Laucala Island has welcomed Chef Anthony Healy as its new executive chef. Healy joins the luxury resort in Fiji after leading a team of 13 chefs at Australia’s Lizard Island, bringing extensive experience in high-end, island-focused cuisine.

At Laucala, Healy will design menus that highlight the island’s native produce and seasonal bounty. He will work closely with the property’s farm manager to expand vegetable, fruit and herb production and to manage sustainable livestock practices, ensuring the kitchen’s needs align with on-island cultivation.

As an 80 percent sustainable resort, Laucala Island grows the majority of the ingredients used in its restaurants. Vegetables are started in hydroponic systems and transplanted into fertile Fijian soil, where they mature before being harvested and delivered straight to the kitchen, minimizing transport and preserving freshness.
