Waldorf Astoria Los Cabos Pedregal has unveiled several culinary enhancements across the property, including an open-air Agave Study at Peacock Alley, the new Neutral Coffee Lab, and a redesigned signature restaurant Don Manuel’s that introduces TRAVESÍA, a nine-course taco tasting menu.

Guests arriving at Peacock Alley are welcomed by the Agave Study, an open-air tasting space dedicated to the rich tradition of Mexican agave spirits. Curated by David Hernandez, the resort’s director of bars and agave expert, the Agave Study features a thoughtful selection of spirits alongside complementary pottery and glassware chosen to enhance aroma and flavor. The program highlights regional expressions, including tequila from Jalisco, mezcal from Oaxaca, bacanora from Sonora, sotol from Chihuahua, and raicilla from Jalisco.
The Neutral Coffee Lab introduces an elevated coffee experience, showcasing regional coffee varieties and a range of brewing methods. Designed for both casual and devoted coffee lovers, the lab pairs carefully prepared beverages with a menu of sandwiches, salads and pastries. Large terraces offer ocean views, allowing guests to enjoy their coffee while overlooking the Pacific.
