The newly opened Nello Alpine brings Swiss Alpine chic to the base of Aspen Mountain in Aspen, Colo. Located adjacent to the Residences at the Little Nell, the restaurant is the creation of chef Nello Balan and showcases dishes influenced by his European background. The menu includes refined comforts such as truffle soup and Osso Bucco al Bosco, prepared with veal shank and mountain mushrooms. At the bar, a dedicated Trails menu highlights favorites and regional specialties inspired by mountain cuisine from around the world.
The interior blends original artworks with local materials and luxe details: a flamed oak bar, leather banquettes and cowhide benches sit alongside glittering glass and crystal accents, including two Swarovski chandeliers imported from Holland. Guests can enjoy a cozy, heated terrace that offers views of the surrounding peaks. The bar program pairs classic cocktails like the Hot Toddy and the Old Fashionista with signature creations: The Nello Royal, featuring Louis XIII cognac, Grand Marnier Cent Cinquantenaire and demerara sugar; and the Black Rose Caviar, a layered mix of Black Rose liqueur, rose water, rose bitters, coffee liqueur and spiced rum.
The restaurant’s design and menu intentionally celebrate alpine traditions while delivering a refined dining experience tailored to Aspen’s mountain setting. Whether visiting for a luxurious après-ski meal, a seasonal tasting, or cocktails by the fire, Nello Alpine emphasizes quality ingredients, European culinary influences and a warm, sophisticated atmosphere.
