Each Art of Water menu is curated by the culinary teams at participating Omni properties to showcase dishes and flavors that represent their destination. At desert retreat Omni Scottsdale Resort & Spa at Montelucia, the pool menu leans into Southwestern influences: tacos feature fillings such as blackened fish, poblano-braised pork and carne asada. In Austin, Omni Barton Creek Resort & Spa offers items like pulled pork quesadillas with roasted pepper rajas and a smoked brisket sandwich served with house-made pickles. On Hilton Head Island, Omni Hilton Head Oceanfront Resort taps its coastal setting with Oysters Two Ways and a shrimp roll dressed in a creamy dill-lemon mayo.

The Art of Water concept encourages each hotel’s culinary team to use local ingredients and regional techniques so guests can enjoy a sense of place while relaxing poolside. Menus balance lighter, refreshing options that pair well with warm weather—such as ceviches, chilled salads and fruit-forward cocktails—with heartier selections for those wanting a more substantial bite after a day of activities.
