Hotel Saint Augustine, set to begin a soft opening in Houston this December with an official debut in January 2025, is a design-forward boutique hotel from Austin-based hospitality group Bunkhouse. The property continues Bunkhouse’s emphasis on thoughtful, locally inspired design and hospitality.
Located in the heart of Houston’s Montrose Museum District, Hotel Saint Augustine spans five small buildings across two floors and offers 71 rooms and suites. The hotel’s amenities include Perseid, an all-day restaurant; an intimate lobby bar; flexible event space; and a cloistered circular courtyard pool, all designed to create a relaxed, neighborhood-focused atmosphere.

Post Company, an award-winning design studio with bases in New York and Wyoming, is responsible for the hotel’s interiors. Working with Bunkhouse, Post Company crafted a warm and whimsical environment opposite the Menil Collection campus near the Menil Drawing Institute. While Hotel Saint Augustine is not formally affiliated with the Menil Collection, its aesthetic and programming intentionally nod to the spirit and character of the Menil family’s artistic legacy and to Houston’s broader cultural landscape.
Architectural design is led by Texas-based Lake Flato Architects, reflecting Bunkhouse’s regional roots, with landscape architecture by Ten Eyck. The property is composed of interconnected structures linked by open-air bridges and porches that integrate with the neighborhood’s residential scale. Four landscaped courtyards and winding outdoor pathways create a private garden-like setting for guests, emphasizing indoor-outdoor living and neighborhood connection.
The hotel’s food and beverage operations, including Perseid, the lobby bar, and event catering, are headed by Houston chef and restaurateur Aaron Bludorn. Bludorn is known for opening three notable Houston restaurants, including Bludorn—which was a James Beard Awards semifinalist in 2024—Navy Blue, and Bar Bludorn.

Under the culinary leadership of Chef Bludorn and Director of Operations Cherif Mbodji, Perseid is conceived as a neighborhood bistro rooted in Gulf Coast flavors with French-inspired technique. The menu aims to reflect Houston’s culinary diversity by blending refined comfort, classic technique, and bold, seasonally driven flavors.
“The restaurant is going to be a Gulf Coast bistro,” Bludorn said. “It’s going to be a fun meeting point for Houstonians to come and enjoy French-inspired food with a Gulf Coast bent.”
