All this month at Ritz-Carlton, Hong Kong, Executive Chef Peter Find has partnered with Dom Pérignon’s Chef de Cave Richard Geoffroy to present a distinctive gastronomic experience—served with both attitude and altitude. The collaboration brings diners the world’s highest Chef’s Table, featuring carefully paired Dom Pérignon champagnes and the direct attention of Chef Find’s culinary team, who remain available throughout the evening to describe ingredients, techniques and the inspiration behind each course.
The five-course tasting menu highlights refined, seasonally driven dishes. Offerings include shrimp accented with chestnut shavings and roasted squash; veal medallions accompanied by parsnip, fondant potato and a crisp mushroom garnish; and seared scallops paired with citrus ceviche, black truffle and beets. Each course is matched with Dom Pérignon selections chosen to complement the flavors: Dom Pérignon Vintage 2003, Dom Pérignon Oenothèque 1996 and Dom Pérignon Rosé Vintage 2002.
The Dom Pérignon Pairing Menu is served at the Chef’s Table on Level 102 of the hotel, with service available from 6–11 p.m. through Nov. 30. The experience is priced at HK$3,880 per guest (approximately US$500) for bookings of six to eight diners. The Ritz-Carlton, Hong Kong, and its six dining venues occupy the upper levels of the International Commerce Centre, offering sweeping views over Victoria Harbour, Hong Kong Island and the New Territories.
