Designed by Rockwell Group, Blu blends a warm, contemporary aesthetic with the island’s natural beauty. The restaurant features an expansive white marble terrace that frames panoramic views of Santorini’s volcanic cliffs and blue horizon. Interiors are light and airy, integrating seamlessly with the rugged landscape. Guests can enjoy an open-air bar, a reflective pool and music from a resident DJ while dining al fresco.

Blu’s cuisine draws global influences but remains rooted in Greek tradition, highlighting fresh, regionally sourced produce and seafood. The dinner menu includes classic Greek salads, dry-aged cuts such as Greek veal and Spanish Black Angus, the catch of the day, and a variety of shareable plates.
