Catskills-based Eastwind Hotels has announced the relaunch of its flagship Windham, New York property, Eastwind Hotel + Bar, with the opening of Mountain House. The addition brings 12 new guestrooms, increasing the hotel’s total to 32, and introduces a new dining concept, Dandies, while preserving and elevating the property’s signature Scandi-chic design.
“Creating the Mountain House felt like returning to our roots,” said Julija Stoliarova, co-founder and creative director of Eastwind Hotel + Bar. “At the Mountain House, I wanted to carry forward the elements people already love — the Pendleton blankets, the vintage decor — but give the space its own personality. Windham’s palette embraces its distinct surroundings, with tones of navy, terracotta and beige. We’re looking forward to welcoming guests into the refreshed Windham property.”

Stoliarova led the design, shaping rooms and common areas into a modern Scandinavian retreat made warm and inviting with cream tones, natural wood accents, vintage brick flooring and playful retro light fixtures. The property also features a custom-built bar and a Malm Imperial Carousel Fireplace, which together create cozy gathering points for guests.
Outdoor areas extend the hotel’s welcoming spirit. Picnic spots include communal tables and forest seating, while a seasonal outdoor biergarten provides a relaxed setting for drinks and conversation surrounded by nature.

Dandies, a sister concept to the Dandelion restaurant at Eastwind’s Olivearea Valley location, brings classic barbecue fare to Windham, complemented by craft cocktails, inventive coffee beverages and house-made ice creams. The menu emphasizes shared plates and approachable comfort food crafted with care.
Entrées feature generous, smoky options such as a colossal bone-in short rib, smoked half chicken and cedar-grilled steelhead trout, alongside vegetarian-friendly choices like crispy trumpet mushrooms. Sandwich selections are hearty and flavorful, with highlights including masa-dusted shrimp, BBQ chicken and a grilled burger.
“I’ve worked on a few different concepts over the years, but this captures everything I love about the Catskills,” said Daniel Cipriani, co-founder and chef. “We wanted Dandies to have that easy comfort that pulls you in and makes you want to stay — a space that brings people together. You can eat by the fire or out in the seasonal biergarten. It’s about connection — to the place, to the food, to each other. It’s thoughtful, but never trying too hard — just a natural extension of what we love about Windham and the Catskills.”
The relaunch of Eastwind Hotel + Bar and the debut of Mountain House and Dandies reinforce Eastwind Hotels’ commitment to thoughtful design, local character and convivial dining.
