Spring Flavors: Seasonal Dining Experience at Hotel Hassler Rome

To present a fresh, contemporary take on Italian cuisine in the heart of Rome, the Hotel Hassler Roma’s Michelin-starred panoramic restaurant, Imàgo, has introduced a new spring menu. Chef Francesco Apreda draws on the season’s finest local produce while adding creative influences from his travels and culinary experiences in Japan, London and India.

The updated menu highlights distinctive ingredients such as shiso leaves, hemp seeds and black cardamom. Guests can choose from three curated tasting menus—Signature Dishes, Flavors of a Journey and Vegetarian Dishes—each designed to showcase seasonal flavors and refined technique. All of this can be enjoyed while taking in sweeping views through the restaurant’s wraparound windows, which frame landmarks including the Trinità dei Monti, Santa Maria Maggiore, Sant’Andrea delle Fratte, Sant’Agnese on Piazza Navona and the Pantheon.

For those who want to recreate a taste of spring at home, Imàgo has shared a recipe from the new menu that demonstrates the kitchen’s balance of tradition and innovation.
