The Ritz-Carlton, Millenia Singapore and its signature Cantonese restaurant Summer Pavilion have been awarded a Michelin star in the inaugural Singapore Michelin Guide. Summer Pavilion is the only Chinese restaurant located inside a hotel to receive this distinction, marking an important recognition of the property’s culinary standards.

Leading the kitchen is Executive Chef Cheung Siu Kong, who joined Summer Pavilion in 2003 and assumed his current role in 2014. With more than 25 years in the industry, Chef Cheung emphasizes simplicity and respect for ingredients. “My cooking philosophy is simple,” he explains. “The key to creating authentic Cantonese dishes lies in modest techniques that bring out the natural flavors of the ingredients.” His approach focuses on clarity of flavor and careful preparation to let each component shine.
In celebration of the Michelin recognition, Summer Pavilion is offering a special menu that showcases Chef Cheung’s signature creations. Highlights include barbecue Iberico pork, South African abalone, a delicate sea whelk soup, and premium Japanese wagyu beef. These dishes demonstrate the kitchen’s skill at balancing traditional Cantonese techniques with high-quality, carefully sourced ingredients.
Summer Pavilion also recently completed renovations to enhance the dining experience. The refreshed space now features six private dining rooms, ideal for intimate gatherings, business meals, and celebratory occasions.
