Signature dishes demonstrate the kitchen’s inventive approach, such as braised snail ravioli with spinach and equsi confit topped with spinach foam; globe artichoke hearts layered with ratatouille and goat cheese, paired with sweet potato gnocchi, rocket and balsamic onions; and decadent desserts like the plantain and banana tart served with poached banana ice cream and white chocolate sauce.
