In the beachside town of Placencia on Belize’s Caribbean coast, the upscale Sirenian Bay Resort & Villas has opened the three60 Martini Bar for the first time. The new rooftop venue brings a fresh option for cocktails, small events and relaxed evenings in this popular seaside destination.

Perched on the rooftop of a two-story building on the lagoon side of the Placencia Peninsula, three60 Martini Bar offers 360-degree panoramic views of palm-lined beaches and the surrounding lagoon. From this vantage point guests can watch sunsets over the Maya Mountains while enjoying a wide selection of cocktails and a menu of fresh tapas. The covered thatch-roof area measures 1,250 square feet, with an additional 880 square feet of open-air space, making the rooftop well suited for intimate weddings, rehearsal dinners, receptions, anniversaries, birthday celebrations or business dinners.
The cocktail list ranges from classic gin and vodka martinis to Caribbean-inspired variations. Signature choices include a Coconut Martini made with vanilla vodka and coconut rum, a Purple Basil Martini featuring basil harvested from the resort’s organic garden, and an Espresso Martini prepared with fresh Central American coffee. The bar emphasizes locally influenced flavors alongside traditional favorites.

The tapas menu highlights Belizean ingredients and flavors, including sweet potato croquettes served with watermelon rind chutney, sautéed chaya with jalapeño cheese sauce, and mojo steak skewers accompanied by chimichurri and jalapeño pineapple slaw. Light appetizers from the resort’s casual dining spot, Inky’s, are available from 3–5 p.m., while the full tapas selection is served from 5–9 p.m. The three60 Martini Bar operates Thursday through Saturday, opening at 3 p.m. and remaining open into the evening.
