Located beside the resort’s infinity pool, the service celebrates Mexico’s abundant fresh fruits—mango, watermelon, jicama, pineapple and coconut—offering refreshing, light options inspired by the colorful fruit carts found throughout Mexican plazas.

To enhance the natural flavors and health benefits of the fruit, the cart pairs selections with a curated range of artisanal salts and spices. Options include Maldon salt, prized for its clean crystals; Himalayan pink salt, noted for its mineral profile; antioxidant-rich truffle salt; potassium-rich black volcanic salt; and traditional Maguey worm salt, or sal de gusano. The latter is a distinctive Mexican seasoning made by blending sea salt with ground, toasted agave worms and chili peppers, delivering a smoky, savory accent that complements fresh fruit.
Among the offerings, Colima sea salt stands out. Harvested by hand from the Lagoon of Coyutlán in Colima by local salineros, this sea salt is valued for its balance of essential minerals—magnesium, potassium and calcium—and for its reputed purity, including an absence of microplastics. Colima salt is traditionally gathered only a few days each year, a practice that contributes to its rarity and appeal.
