Earlier this year, COOKFOX Architects announced the opening of the Bruce Springsteen Center for American Music at Monmouth University in Long Branch, New Jersey. This new cultural institution is dedicated to telling the story of American music while celebrating Bruce Springsteen’s contributions within that tradition. The 30,000-square-foot facility brings together exhibits about Springsteen and other strands of American music, an extensive Springsteen archive, a 240-seat auditorium for concerts, lectures and screenings, and adaptable gallery space for rotating exhibitions.

© Alex Ferrec / COOKFOX Architects

The center’s founding director, Bob Santelli, is widely recognized for his museum work interpreting the history of rock and roll and other popular music forms. Under his leadership, the center aims to serve as both a research resource and a public destination, making archival materials and curated narratives accessible to scholars, students, and fans alike.

Rick Cook, founding partner of COOKFOX Architects, explains that the project began with a personal connection to Bruce Springsteen as a storyteller, and that connection guided the design process. The team sought to reflect Springsteen’s artistic virtues—honesty, courage, and authenticity—in the visitor experience, the building’s proportions and materials, and in the careful integration of performance and exhibition spaces.

In designing the facility, the architects prioritized how the building would support and enhance the content it houses. The auditorium, described as a high-performing space, is intended for a range of uses: musical performances, academic lectures, film and video presentations, and community gatherings. Gallery zones are arranged to accommodate both permanent displays and changing exhibitions, allowing the center to evolve over time and present fresh perspectives on American music.

Conceived as a multipurpose destination for exhibitions, education, performance and research, the center also acknowledges its local roots. It is sited in a neighborhood that figures prominently in Springsteen’s early career; nearby venues and the university itself were important settings during his formative years. The center’s design and programmatic focus intentionally engage with that local history while placing it within the broader story of American musical traditions.

© Alex Ferrec / COOKFOX Architects

Located across from the historic Guggenheim Memorial Library on the Monmouth University campus and in the vicinity of the Great Hall at Shadow Lawn, the center occupies a prominent and contextually meaningful site. Monmouth University not only hosted Springsteen during his early performances but also houses a portion of his archives, making the campus a natural home for an institution focused on his legacy and the American music story more broadly.

Architecturally, the building is clad in weathering steel panels and employs an unstained mass-timber structure, choices that provide a warm, tactile character while aging gracefully in the coastal environment. These material decisions and the building’s form were informed by the team’s desire to create an architecture that resonates with the music it celebrates—direct, robust, and grounded in place.

© Alex Ferrec / COOKFOX Architects

Visitors approach the music hall via a boardwalk, a deliberate and evocative gesture that references local shoreline paths and invites a contemplative arrival. This sequence connects the center to its coastal setting and creates an approachable, human-scale experience before entering the exhibition and performance spaces.

Beyond its galleries and auditorium, the center is designed to support research and education. Archival holdings and interpretive resources will be organized to facilitate study and scholarly work, while public programs, workshops and talks are expected to engage students, researchers and the wider community. By balancing exhibition, performance and archival functions, the facility aims to be both a lively public venue and a serious center for preservation and scholarship.

COOKFOX’s team emphasizes that the building’s role is to serve the stories it contains rather than to overshadow them. The architectural intent is to create a setting in which the music, the artifacts and the narratives take center stage, supported by carefully considered acoustics, circulation and display conditions. In this way, the Bruce Springsteen Center for American Music seeks to honor a regional musical legacy while contributing to the cultural life of Monmouth University and the surrounding community.

This November, Dromoland Castle will close for six months to undergo the largest redevelopment in its 63 years as a hotel. The 16th-century estate in County Clare is scheduled to reopen in June 2027, unveiling a comprehensive and carefully considered transformation that updates accommodations, public spaces, wellness facilities and culinary offerings while remaining true to the property’s historic character.

© Dromoland Castle

A central element of the redesign is the glass-enclosed Atrium, which reimagines the castle’s historic courtyard as a year-round social hub. Designed to be a light-filled focal point, the Atrium will host morning coffee, afternoon tea and evening cocktails, providing guests with a versatile indoor-outdoor experience regardless of Ireland’s famously changeable weather. The space aims to become a natural meeting place for guests and a refined backdrop for seasonal programming and intimate events.

Outside the main castle, the newly renovated Walled Garden Collection brings together 13 distinct accommodations created within the converted former stables. Thoughtfully situated within centuries-old walled gardens and overlooking a yew tree gallery dating to 1740, these rooms are intended for families and larger groups seeking privacy and a close connection to the estate’s historic landscape. The conversion preserves the character of the original stable structures while introducing modern comforts and circulation that respect the garden setting.

© Dromoland Castle

Complementing the Walled Garden Collection is The Heritage Collection, which will occupy a full floor in a wing opposite the castle’s main entrance. This new offering includes 16 guestrooms and five suites, each designed to reflect the property’s country-house tradition. Once the project is complete, Dromoland Castle will offer a total of 121 accommodations, including two private lodges tailored to guests seeking longer-term stays and a more secluded experience within the estate grounds.

The redesign carefully preserves the castle’s architectural framework while celebrating Irish craftsmanship and regional materials. Connemara marble—the nation’s distinctive green stone—will feature in select areas, paired with bespoke metalwork, natural linens, wool textiles and sumptuous velvets to create interiors that feel both authentic and contemporary. In addition, the project includes a collaboration with Ulster Carpets, the Northern Irish company known for significant ceremonial commissions, to produce custom floor coverings that complement the castle’s refined interiors.

© Dromoland Castle

Wellness features prominently in the renovation, with new and enhanced experiences built around the estate’s natural assets and existing offerings. Guests will continue to enjoy immersive activities such as forest bathing in ancient woodlands and guided meditation in the Whisper Room, while spa services will expand to include signature treatments such as those by Dr. Barbara Sturm. For summer guests, a highlight will be the introduction of glass-fronted saunas positioned on the shores of Lough Dromoland, the property’s private lake, providing a serene setting for relaxation with views across the water.

Alongside these physical updates, the redevelopment will refine culinary spaces and service flows to support enhanced dining experiences, event capacity and daily guest life. Across public areas, accommodations and wellness facilities, the overarching goal is to preserve Dromoland Castle’s historic soul while introducing modern comforts and sustainable design choices that will serve visitors for decades to come. When it reopens in June 2027, the castle will present a refreshed, cohesive vision that honors its past and elevates the guest experience for the future.

I was surprised to learn Denmark consistently ranks among the world’s happiest countries. At first glance, the cool Nordic climate and long winters might seem at odds with a perpetually sunny disposition, but after a visit to Copenhagen the reasoning becomes clear. The city balances efficient modern living with cozy, human-scaled neighborhoods, thoughtful design and a strong food scene. Whether you’re a fashion-forward traveler, a Michelin-star seeker, a history enthusiast or simply curious, Copenhagen delivers experiences that linger long after you leave.

Copenhagen is well served by public transportation, but the best way to experience the city is like the locals: by bike. Cycling infrastructure is excellent, with dedicated lanes and bike-friendly intersections, making it easy and enjoyable to traverse the city quickly. For first-time visitors who want to pack as much into a short stay as possible, choose accommodation in a central district. The Carlsberg District is an especially compelling option for those who appreciate history, architecture and easy access to top dining and cultural attractions.

Hotel Ottilia © Visit Copenhagen / Abdellah Ihadian

The Carlsberg District’s history begins in the mid-19th century when J.C. Jacobsen founded the Carlsberg Brewery. Over generations the brewery complex grew into a distinct enclave, enclosed by striking brick walls and punctuated by ornate gates and historic industrial buildings. After brewing operations moved elsewhere in the 21st century, the area underwent thoughtful transformation. Old warehouses and workers’ homes were adapted into boutique hotels, lively restaurants, creative offices and museums, preserving the character of the place while making it relevant to contemporary urban life.

At the heart of the neighborhood is Hotel Ottilia, a boutique property that occupies two former brewery buildings. Named for Ottilia Jacobsen, the hotel blends the scale and materiality of industrial architecture with clean Danish design principles. The lobby embraces industrial heritage with concrete and exposed steel accents, while interior touches and furnishings reflect modern Scandinavian comfort. It’s a pleasant place to relax, meet other travelers and begin exploring the neighborhood on foot or by bike.

Carlsberg’s Chalk Tower © Visit Copenhagen / Abdellah Ihadian

Copenhagen sits among the world’s most respected food destinations, on par with capitals known for culinary innovation. Options span simple market stalls and casual street-food markets to elegant tasting menus in refined dining rooms. Near Hotel Ottilia you’ll find restaurants that celebrate regional produce alongside international influences. For a memorable evening, consider a trattoria that serves generous, ingredient-driven Italian dishes paired with thoughtful wine selections; elsewhere, inventive kitchens combine seasonal Nordic produce with global techniques.

The convergence of Danish and Japanese culinary sensibilities is apparent in several of Copenhagen’s kitchens: both traditions prize fresh seafood, clean presentation and seasonality. Restaurants that blend these traditions create a distinct dining experience where precision and subtlety meet bold, memorable flavors. A short ride from the Carlsberg District brings you to several notable dining rooms where chefs curate compact, focused menus that highlight local fish, vegetables and artisanal products.

Beyond dining, the Carlsberg District is an appealing case study in urban regeneration. It demonstrates how historic industrial sites can be repurposed into mixed-use neighborhoods that support culture, hospitality and creative industries while maintaining a strong sense of place. The brick facades, narrow courtyards and preserved details provide texture and continuity, while new additions — thoughtfully scaled and designed — bring contemporary life into the district.

Practical tips: rent a bike for short-term travel to maximize mobility and feel like a local; reserve popular restaurants in advance, especially for weekend dinners; and plan time to wander—Copenhagen rewards slow exploration, from canals and parks to small galleries and design shops. With an efficient transport network and compact layout, you can experience the Carlsberg District and much of central Copenhagen in just a few days, leaving you eager to return for deeper discovery.

Water, bear spray and good navigation are essential for a long hike, but none of that matters much if your boots make every step miserable. Ill-fitting hiking boots — stiff uppers, heels that rub, or toe boxes that squeeze — can ruin a trip. Often the problem isn’t simply padding or materials but how the footwear forces your foot to move unnaturally. That’s where modern barefoot-style shoes come in: not the flimsy, open-toed sandals of decades past, but durable, well-made footwear that supports your journey while letting your feet move naturally and comfortably across varied terrain.

Andrew Jackson, founder and CEO of U.K.-based Freet Barefoot Shoes, draws on years of experience in performance footwear and a lifetime of outdoor activity to build shoes for the kinds of walks and hikes that test both person and product. A veteran of the hiking-boot industry who has logged miles during military service and extended treks, Jackson — together with his daughter Daisy Jackson, Freet’s sales and marketing director — shared the thinking behind their trail-ready designs and why those choices matter for anyone who spends time on their feet outdoors.

© Freet Footwear

Global Traveler: What inspired you to leave the mainstream footwear industry to step out on your own?

Andrew Jackson: After many years of playing sports, spending long stretches in the military and getting outdoors whenever possible, I developed persistent knee pain. I had worked in the footwear industry for a long time and tried some of the best boots available, but the discomfort made me question whether conventional designs were doing the right thing for the body. Discovering barefoot-style footwear felt like a revelation: it aligned with how feet and lower limbs are meant to function. Rather than piling on structures that change how the foot works, I wanted to craft footwear that protects from rough ground while enabling the foot to move, flex and strengthen naturally.

GT: From your industry background, what design elements did you decide were essential to make footwear that better matches how humans actually walk?

AJ: My time in the industry taught me that better footwear isn’t about adding features for the sake of it; it’s about adding what truly matters. For us that means focusing on durability, secure traction, protection where you need it, and immediate comfort — all while allowing the foot to function naturally. Key elements include a wide toe box that gives toes room to splay, a flexible sole construction, and a zero-drop profile that keeps the heel and forefoot level to preserve natural posture. Every design choice answers one question: does this help the foot move more naturally while still performing in real-world conditions? If not, it doesn’t make the cut.

© Freet Footwear

Daisy Jackson: That principle guides everything we do. As a family-run business, we personally wear and test every new model across different environments — mountain trails, urban streets, travel and everyday use. That hands-on testing feeds back into incremental improvements, so the shoes reflect real-world performance rather than lab-only specs.

GT: Some people equate “barefoot” with minimal protection and inadequate support, especially for rough hiking. How does Freet balance natural movement with protection?

AJ: That’s a common misconception. Barefoot-inspired footwear doesn’t mean walking directly on the ground unprotected; it means allowing the foot to move naturally while still shielding it from hazards. At Freet we engineer grip, abrasion resistance and impact protection exactly where they’re needed, and we avoid unnecessary structure that restricts natural motion. A roomy toe box, a zero-drop sole, and a sole that flexes with the foot all allow the foot to sense ground and respond naturally, which reduces strain and improves comfort over long distances.

We also avoid a one-size-fits-all outsole. Our range includes purpose-built outsoles and midsole constructions tailored to specific uses. For everyday urban walking we use compounds tuned for comfort and longevity; for mixed terrain we deploy tread patterns and rubber compounds that balance traction and flexibility; for demanding mountain routes we use more aggressive lugs and durable rubber to handle rock, mud and steep gradients. Matching outsole and midsole construction to the intended activity delivers the right mix of ground feel, shock absorption and protection while maintaining the barefoot philosophy of natural movement.

© Freet Footwear

GT: Any final thoughts you’d like readers to take away?

DJ: We’re seeing more people rethink what they want from footwear. Many consumers now prioritize long-term comfort and the ability to move naturally over simply adding thick cushioning or rigid control features. Our goal has always been to combine natural movement with practical protection and durability. Being a family business lets us stay close to every stage — design, development and real-world testing — which helps us remain true to that mission. Ultimately, the best footwear is the kind that keeps you comfortable, confident and capable wherever your adventures take you, whether that’s a city commute, a long-distance trail or a local loop in the hills.

Recess Hotel & Club Savannah will be centered on a “retro futurist” aesthetic that channels nostalgia and pop-culture references in a playful, sophisticated way. The hotel spans 221 guestrooms, including 23 suites and imaginative Rumpus Rooms. Each Rumpus Room is designed as a lively social hub on its floor, stocked with custom vending units, vintage-style board games inspired by the 1970s and 1980s, and other amenity touches intended to spark social interaction and fun.

Guestrooms emphasize natural materials, breathable organic linens and thoughtfully selected Corpus Naturals bath amenities to encourage rest and relaxation. Every room is appointed with a custom throw designed by local artist and SCAD graduate Juliana Lupacchino (JULU). The 10th-floor suites offer elevated living with 17-foot ceilings, dramatic arched windows and sweeping panoramic views of the city. Guests who wish to take a piece of the hotel home can purchase the JULU throw at the on-site retail boutique, Shop Recess.

The hotel features a variety of dining and beverage venues tailored to different moods and occasions. Le Flâneur is a French brasserie that highlights the property’s original mosaic flooring and serves a menu of crepes, tartines, oysters, steak frites and classic cocktails. Kilter, a retro‑chic rooftop bar on the 12th floor, will claim Savannah’s highest rooftop pool and offer refreshing cocktails alongside Asian-inspired small plates and sushi. The Lobby Bar is conceived as a living-room style lounge with woven custom chandeliers, tiled columns and verdant greenery, providing a relaxed place to meet. For grab-and-go options, The Servery channels a Japanese automat tradition with a takeout window presenting smoothies, juices, pastries, salads and sandwiches suitable for breakfast and lunch.

LEFT LANE’s wellness and spa concept, Saltgrass, is reimagined within the hotel as a holistic wellness destination. The fitness area is circuit-based around a central turf zone for functional training and will include TRX stations, boxing bags and a calendar of private sessions. The wellness space also features immersive recovery and relaxation amenities, including a bioharmony lounge, sound temple and thermal facilities such as steam rooms, saunas and cold plunges designed to support recovery and wellbeing.

Recess Hotel & Club Savannah offers extensive meeting and event facilities to accommodate a range of gatherings. The property includes a 6,500-square-foot, two-story event hall—the only new construction on site—beginning with the first-floor Annex Ballroom. That space opens to an outdoor area overlooking Johnson Square and has its own street-side entrance for weddings and conferences of up to 250 guests. Above it, the second-floor Conservatory draws inspiration from Savannah’s famed garden culture, featuring abundant, movable greenery to create flexible event settings. A rooftop lawn provides additional panoramic views and an extra 830 square feet of adaptable event space for smaller ceremonies, receptions or social events.

At the heart of the hotel is Club Recess, a members-only social club occupying 5,500 square feet on the second floor. The club is configured with libraries, studios, lounges, meeting rooms, communal workspaces and a conversation pit designed to encourage discussion, creativity and networking. Membership perks include a complimentary photoshoot session that provides a professional headshot, and a lively social calendar with weekly game nights, bi-weekly Friday happy hours and a lineup of local live music and DJ sets on weekends.

© LEFT LANE Development

For a limited time, the hotel is offering a launch promotion for early guests. The introductory offer provides select benefits to initial visitors, including a percentage discount on stays, a hotel credit to use on food, beverage or services, and a commemorative Recess keychain. This opening initiative is designed to welcome locals and travelers alike to experience the property’s blend of social programming, thoughtful design and hospitality-driven amenities.

Recess Hotel & Club Savannah aims to deliver a distinctive balance of relaxed luxury and social vibrancy. From its retro futurist interiors and curated public spaces to its wellness programming and flexible event venues, the hotel positions itself as a cultural and social hub in the heart of Savannah—an inviting clubhouse for guests who want to unwind, explore and connect.

If you’ve never visited wine country during harvest, you’re missing one of the most vivid experiences the region offers. Vineyards come alive with crews picking sun-warmed clusters while the winery works through sorting tables and presses, gently extracting juice and tannins. In the cellar, the aroma of fermenting grapes and baking bread fills the air as tanks bubble and winemakers monitor every step. For enthusiasts, witnessing harvest by being on-site creates a deeper appreciation for the labor and timing behind each bottle—an intimacy that can’t be matched by a casual tasting at the bar.

If you want an iconic Napa harvest celebration, V. Sattui Winery in St. Helena is a classic choice. Founded generations ago by Vittori Sattui, the family business was reestablished in Napa Valley in the 1970s and became known for welcoming visitors with hospitality-focused events. Their long-running harvest festivities typically include hands-on activities like grape stomping, demonstrations of winemaking stages from cooperage to bottling, live music, Italian-style food, and ample wine sampling. These kinds of events let guests see the craft, taste the results, and enjoy the communal energy of harvest season.

PEJU Winery in Rutherford helped shape the modern tasting-room model by being among the first to sell directly to visitors. Today the family-run, certified-organic operation continues that spirit, inviting guests to celebrate harvest with an energetic grape stomp and subsequent family-style dining paired with a range of winery selections. Events at this scale combine conviviality and education—visitors leave having learned a little more about vineyard cycles while savoring freshly produced wines.

Grgich Hills Estate, also in Rutherford, blends historic significance with hands-on harvest traditions. Co-founded by a noted winemaker whose Chardonnay helped redefine American wine on the world stage, the estate now practices regenerative farming and opens its harvest to guests. Events often highlight cultural ties and winemaking history with regional food, music, traditional dances, and opportunities for visitors to participate in grape stomping—connecting modern production with old-world practices.

For lovers of Pinot Noir, small producers like Elkhorn Peak Cellars offer intimate harvest experiences. Operating as a family-run micro-winery, Elkhorn Peak focuses on site-driven expressions, and their vineyard stomp events provide a guided walk through the vines, a chance to stomp clusters in a barrel, and time to relax with a glass and a personal charcuterie plate. These smaller gatherings are ideal for people who want to learn about vineyard stewardship and winemaking details from growers and winemakers directly.

Reynolds Family Winery, founded by a dentist-turned-winemaker and now a second-generation estate, situates itself along the Silverado Trail near famed appellations. The winery’s harvest party often centers on a playful grape-stomping contest and the rare treat of tasting older library bottlings pulled from the cellar. Paired with wood-fired pizzas and a festive atmosphere, events like this combine education, competition, and celebration in a way that highlights both the work and joy of harvest.

Across Napa, harvest events vary from large, festival-style gatherings to small, curated experiences. What they share is the opportunity to see the seasonal rhythms of the vineyard, taste freshly made wines, and engage directly with the people who tend the vines and craft the wines. Visiting during harvest provides a sensory-rich perspective on viticulture and winemaking that deepens appreciation for every bottle purchased at retail or encountered at a tasting table.

INFO TO GO
The majority of visitors traveling to Napa Valley arrive via San Francisco International Airport or Oakland International Airport, both served by major carriers. Sacramento International Airport can be a useful alternative, depending on schedules and traffic. Public transportation options are limited for reaching Napa directly; travelers flying into San Francisco sometimes choose the San Francisco Bay Ferry to Vallejo and then transfer to VINE Transit bus service to reach the valley. Because the region is spread out and attractions are dispersed along scenic roads, most visitors find it easiest to rent a car or arrange private transportation. Depending on which airport you use and current traffic conditions, driving to Napa Valley typically takes between one-and-a-half and three hours.

The dining journey began well before I entered the 2-Michelin-starred restaurant at Hotel Arts Barcelona. From check-in onward, the hotel set a refined tone: a private elevator to the club level, two key cards for our room and two perfectly chilled glasses of Cava Gran Reserva waiting for us. The timing felt effortless and intentional.

In our room we discovered a tray of local cheeses and cured meats alongside a D.I.Y. pan con tomate. A handwritten note welcomed us and mentioned that Chef Paco Pérez looked forward to receiving us that evening at Enoteca Paco Pérez. That small, personal touch amplified our anticipation and cemented my high impression of the property in under an hour. We had booked a 2-Michelin-Star Experience using Marriott Bonvoy points — a package that included accommodations, breakfast, dinner, WiFi and parking — yet the hotel itself delivered a Michelin-level welcome that complemented the dining experience. When luxury hotels and Michelin-starred restaurants collaborate, they create immersive stays that redefine hospitality.

I’ve encountered similar synergies at other properties, most recently at Waldorf Astoria Washington DC. Housed in the city’s original Old Post Office building, the hotel pairs historic grandeur with a 1-Michelin-star omakase at Sushi Nakazawa. The route to the restaurant leads through the famed Peacock Alley lobby and bar, which serves almost as a prelude to the meal. The lobby’s lively, “see and be seen” atmosphere flows into an intimate omakase where Chef Daisuke Nakazawa presents 20 precisely sourced and crafted nigiri.

“Having a Michelin-starred restaurant within the hotel elevates the entire guest experience in a meaningful way,” said Senih Geray, general manager at Waldorf Astoria Washington DC. “It turns dining from a convenience into a destination, giving our guests the confidence to enjoy world-class cuisine without leaving the property. It also attracts both international travelers and local patrons, reinforcing our position as one of Washington, D.C.’s leading luxury destinations.”

Executive Chef Jason Franey © Auberge Collection

At The Lodge at Blue Sky, Auberge Collection, an exclusive resort in Utah, the dining room has become a sought-after stage for Michelin-starred pop-ups. In 2025, SingleThread — the acclaimed 3-Michelin-starred restaurant from Healdsburg, California — launched its new concept, ThroughLine, at the Lodge. Against a dramatic mountain skyline, guests experienced a 12-course tasting interwoven with an eight-part documentary. That debut set a tone: the property now regularly hosts Michelin-starred chefs who arrive to showcase inventive menus within the Wasatch Mountains.

Chef Thomas Allan of The Modern, the Museum of Modern Art’s 2-Michelin-starred restaurant, held an exclusive three-night residency at The Lodge in March, and Chef Phillip Tessier later brought his 1-Michelin-starred PRESS restaurant for a full takeover. The Lodge typically hosts four to six Michelin-starred chefs each year, drawing guests who want a unique combination of wilderness and world-class cuisine.

“We started working with Michelin-starred chefs from the opening,” said Joe Ogdie, general manager of The Lodge at Blue Sky. “The annual partnership with Chef Kyle and Katina Connaughton of SingleThread Farms shifted how we view chef collaborations and how far they can be realized. Guests come to Blue Sky to reconnect with the natural world, and bringing in these chef partners helps us create the experiences our guests seek.”

The Lodge at Blue Sky, Auberge Collection, dining room © Auberge Collection

For many travelers, an on-site Michelin-starred restaurant can be the deciding factor when choosing between hotels in the same city. In San Francisco, for instance, Parc 55 San Francisco — a Hilton Hotel Downtown — features Kin Khao Thai Eatery by Chef Pim Techamuanvivit, a 1-Michelin-starred restaurant. “Having a Michelin-starred venue inside our hotel is a huge draw,” said Peter Hart, general manager. “It lets guests enjoy world-class dining seamlessly while also attracting locals and visitors who might discover our property for the first time.”

Michelin recognition has come to symbolize more than an exceptional menu; it suggests a hotel’s broader commitment to service and quality. Michelin standards are exacting, and a restaurant that meets them often reflects a property-wide dedication to excellence. That alignment elevates these hotels above typical offerings and positions them as true destination properties.

“Gastronomy is the most authentic gateway to a culture — its ingredients, landscapes, traditions and the people who bring them to life,” said Laurent Gardinier, president of Relais & Châteaux. The organization oversees a portfolio of individually owned luxury hotels and restaurants and counts more than 200 Michelin stars across its properties. For Relais & Châteaux, gastronomy is not an amenity but an integral part of a destination’s identity.

To maintain that identity, Relais & Châteaux developed culinary standards and a global team of inspectors who evaluate properties across 65 countries. Their role is to ensure each member serves cuisine that makes a clear statement and conveys a strong sense of place. “A truly memorable journey always begins with exceptional cuisine,” Gardinier said. Hosting a fine-dining restaurant signals a commitment to authenticity and excellence and ties the hotel’s narrative to its culinary offerings.

Chefs and hoteliers collaborate closely to showcase local character and hospitality culture, transforming a simple stay into a destination where guests feel inspired and genuinely cared for. That partnership turns dining into the central thread that connects a hotel’s values, storytelling and guest experience.

Another advantage of experiencing Michelin-level dining inside a hotel is a sense of freedom. Guests are less constrained by practicalities such as catching the last train or arranging late transportation home. That relaxed frame of mind mirrors what many Michelin chefs strive to create: an environment where diners can let go, focus on the meal and fully inhabit the role of guest — to experience, taste and savor. In these hotel restaurants, the world is distilled into a single destination where exceptional cuisine and hospitality come together seamlessly.
