Explore Hyogo Sake Culture: Top Breweries, Tours & Tastings

You may already know about the mountains, coasts, natural hot springs and the magnificent Himeji Castle that define Hyogo Prefecture in Japan’s Kansai region, but sake — the traditional Japanese alcoholic beverage brewed from fermented rice — is one of Hyogo’s most celebrated treasures.

Hyogo is the birthplace of Yamada Nishiki, the rice variety often called the “king of sake rice.” Over half of Japan’s production of this prized grain comes from the region, which helps explain why Hyogo is home to numerous breweries and cultural sites devoted to sake. Among them is Miyake Sake Brewery, a long-established producer known for craftsmanship and quality dating back to 1819.

One of Miyake’s well-regarded products is the QA variety, produced using a traditional bag-pressing method and the clear waters of the Manabe River. Visitors to the brewery can join guided tours to learn about rice selection, fermentation and pressing techniques, and finish with tastings that illustrate the subtle differences between styles.

Further inland, Nishiyama Brewery sits among Hyogo’s mountain slopes and draws on centuries-old traditions and pristine spring water from the peaks. The brewery offers guided tours that explain local brewing methods and the role of water and climate in shaping flavor, along with tastings that let visitors compare styles produced on-site.

At some breweries in the region, guests can also take part in hands-on sake-brewing workshops and stay overnight in converted brewery accommodations. On-site restaurants often design menus that pair specific sakes with each dish, helping diners understand how acidity, aroma and texture influence food pairing.

For a refined dining experience, MICHELIN-starred Izumi in Kasai offers kaiseki, a traditional multi-course Japanese meal, paired carefully with sake. The restaurant highlights seasonal, locally sourced ingredients and pairs each course with thoughtfully selected sakes, including offerings from Miyake Sake Brewery. Izumi is distinct for its close relationship with Miyake, showcasing those sakes throughout the menu.

Whether you are interested in tasting, learning about brewing techniques, participating in workshops or enjoying expertly paired meals, Hyogo offers a rich, immersive sake culture. The combination of exceptional rice, pristine water sources and generations of brewing knowledge makes the region a compelling destination for anyone who wants to explore Japan’s national drink in depth.
