Indulgent Desserts at Le Méridien: Signature Sweet Menu

Le Méridien Hotels & Resorts is marking National Chocolate Éclair Day (June 22) with the introduction of a global éclair program developed in collaboration with acclaimed pastry chef Johnny Iuzzini, the 2006 James Beard Award winner for Outstanding Pastry Chef. Guests at participating properties worldwide can sample contemporary interpretations of the classic éclair. Each hotel will present the three signature flavors—coffee, vanilla and chocolate—alongside a location-specific variation that reflects local ingredients and culinary traditions. Chef Iuzzini has also crafted eight seasonal recipes inspired by his travels to Le Méridien destinations.

To celebrate the launch, Le Méridien will stage a range of events and programming, including hands-on tutorials and special tastings. Featured local creations highlight the program’s regional creativity: Le Méridien Dallas by the Galleria will showcase maple bacon and Texas honey pecan flavors; Le Méridien Panama will offer dulce de leche with coconut; Le Méridien Munich will present an inventive goat cheese, cranberry and pumpernickel crumb éclair; and Le Méridien Bangkok will serve a citrus-inspired version featuring mango, lime and ginger.

The global initiative aims to blend Le Méridien’s modern, culturally curious spirit with pastry craftsmanship, inviting guests to discover both familiar and unexpected flavor combinations. In addition to in-hotel offerings, the program’s events are designed to engage guests through demonstrations and do-it-yourself sessions led by hotel pastry teams, giving visitors a chance to learn the techniques behind the pastries and to taste the seasonal recipes created by Chef Iuzzini.

By pairing classic flavors with regionally inspired variations, the éclair program underscores the brand’s focus on local influence and culinary discovery. The combination of signature coffee, vanilla and chocolate éclairs with uniquely local versions provides a consistent foundation across properties while allowing each hotel to showcase its own culinary identity.
