“Northern Portugal and Northern Spain share climate, character and many culinary traditions,” said Chef Manzano. “My approach blends those shared influences with both local and international sensibilities. The menus we will present focus on premium ingredients, a strong culinary heritage and contemporary technique. Wines, especially Kopke’s selections, will play a central role, pairing classic purity with elegant expression.”
At 1638 Restaurant & Wine Bar by Nacho Manzano, guests can expect a refined tasting menu that pairs haute cuisine with Kopke wines, highlighting the best of the Douro’s viticultural traditions alongside creative culinary execution. Boa Vista Terrace by Nacho Manzano will feature a more relaxed, social dining concept built around dishes for sharing, designed for enjoying views of the Douro and a casual, convivial atmosphere.
Francisco Viana Brito, general manager of Tivoli Kopke Porto Gaia Hotel, commented on the collaboration: “We are delighted to welcome Nacho Manzano to our hotel. This partnership brings an outstanding and distinctive culinary program to the North of Portugal. Together, Nacho Manzano and Tivoli Kopke Porto Gaia will create a memorable gastronomic experience inspired by the Douro region and by Asturias in Spain.”
The collaboration emphasizes regional ingredients, wine pairings and a menu philosophy that balances tradition and modernity. Guests can look forward to thoughtfully curated dining experiences that celebrate the flavours of the North Iberian coast and valley, interpreted through Manzano’s refined culinary lens.
