“Dining in Madrid is much more than a meal; it’s the city’s grand pastime,” said Amar Lalvani, president and creative director of The Lifestyle Group, Hyatt. “Food must be delicious, of course, but so must the space, the people, and the rhythm. At Thompson Madrid, each venue reflects a refined point of view that embodies the Thompson spirit.”
Perched above the city, MAKÁÁ Rooftop Restaurant offers panoramic views alongside an open kitchen and a fire-forward Mediterranean menu crafted by Grupo Lamucca. The focus on grilled preparations highlights seasonal produce, fresh seafood and farm-sourced ingredients. The rooftop’s lush planting, designed by Laura Berrocal Contreras, creates a verdant backdrop that complements the menu and the relaxed, elegant atmosphere.

At street level, La Barra de Ultramarines serves classic tapas in a relaxed setting with direct street access and an outdoor terrace. The menu highlights traditional Spanish and Madrilenian flavors with dishes such as croquetas de cecina, alcachofas con jamón, steak tartare con tuétano a la brasa, and arroz de pato y foie. La Barra’s convivial atmosphere makes it an ideal spot for casual meals and social gatherings.
Jack’s Club sits within the hotel’s former Church of San Luis Obispo and evokes the atmosphere of a traditional British speakeasy, drawing inspiration from the gentleman’s clubs of Edinburgh’s George Street. Careful preservation of the building’s architectural features complements modern interiors, which include a classic piano bar and a cocktail program that emphasizes storytelling and craft.
