Spring Brunch Cocktails for National Brunch Month & Easter

Cantera Negra Tequila

Cantera Negra Blood Orange Mimosa

  • 1 oz. Cantera Negra Reposado Tequila
  • 1 oz. Aperol
  • 2 oz. freshly squeezed blood orange juice
  • Champagne or sparkling wine

Combine the tequila, Aperol and blood orange juice in a shaker with ice. Shake briefly, then strain into a highball glass filled with ice. Top slowly with Champagne or sparkling wine until the glass is full. Serve chilled.

Cantera Negra Tequila Lime Mojito

  • 1 oz. Cantera Negra Reposado
  • 1 oz. lime juice
  • 1 oz. simple syrup
  • 2–4 oz. soda water
  • 6 mint leaves, plus additional for garnish

Muddle the mint leaves in a cocktail shaker. Add lime juice, simple syrup and tequila, then fill the shaker with ice and shake until well chilled. Strain into a glass over fresh ice, top with soda water and garnish with extra mint for a bright, refreshing drink.

Whiskey Crusta

  • 1½ oz. Bib & Tucker Small Batch Bourbon
  • ½ oz. 1883 Maison Routin Apple Syrup
  • ¼ oz. Luxardo Maraschino
  • ¼ lemon (juice)
  • 2 dashes Fee Brothers Old Fashion Bitters

Shake all ingredients with ice and strain into a glass rimmed with sugar. Garnish with a long lemon peel for a classic, balanced cocktail that pairs well with brunch pastries or savory dishes.

Golden Fizz

  • 2 oz. Bib & Tucker Small Batch Bourbon
  • ¾ tbsp. caster sugar
  • ¼ tsp. lemon juice
  • 1 medium egg yolk
  • 4 oz. soda water

Combine the bourbon, caster sugar, lemon juice and egg yolk in a shaker and shake without ice to emulsify. Add ice and shake again until well chilled. Strain into a fizz glass and top with soda water for a light, frothy cocktail.

Gray Whale Mimosa

  • 2 oz. Gray Whale Gin
  • 1½ oz. fresh orange juice
  • ½ oz. fresh lemon juice
  • ½ oz. Pavan
  • ½ oz. Velvet falernum
  • Golden Road Mango Cart Ale (to top)

Combine the gin, orange juice, lemon juice, Pavan and falernum in a shaker with ice and shake hard. Strain into rocks glasses rimmed with Tajin Clasico seasoning and top with Golden Road Mango Cart Ale for a fruity, effervescent twist on a mimosa.

Whale Flower

  • 2 oz. Gray Whale Gin
  • 5 oz. elderflower liqueur
  • 2 oz. grapefruit juice
  • Soda water

Add the gin, elderflower liqueur and grapefruit juice to a shaker with ice. Shake well and fine-strain into a glass over fresh ice. Top with a splash of soda water for a floral, citrus-forward cocktail that complements spring flavors.

Golden State of Mind

  • 1½ oz. Gray Whale Gin
  • ¾ oz. Aperol
  • ½ oz. fresh lemon juice
  • ¼ oz. simple syrup
  • 2 oz. grapefruit kombucha

Combine the gin, Aperol, lemon juice and simple syrup in a shaker with ice. Shake thoroughly, then pour over ice in a Collins glass. Top with grapefruit kombucha and garnish with a grapefruit peel for a refreshing, slightly bitter cocktail with bright acidity.
