It’s spring, and Etéreo, Auberge Resorts Collection in Riviera Maya, Mexico, is launching a new series of culinary events called Origins of Mexico. This chef-led program offers immersive dining experiences that highlight regional flavors, local traditions, and time-honored culinary practices from across Mexico.

The series began March 28–29 with a tribute to Western Mexico at Pixan, featuring chef-led experiences from Tintoque restaurant in Puerto Vallarta. Upcoming weekends at the resort will spotlight distinct regions and celebrated culinary teams:
Central Mexico (April 10–12)
Central Mexico weekend will feature Licoreria Limantour from Mexico City, recognized among The World’s 50 Best Bars in 2024. Guests can start with a mixology session at Itzam Bar led by Limantour’s team, followed by a chef-led tasting menu at Resol restaurant that explores Mexico City flavors and contemporary techniques.
Southern Mexico (May 2–4)
Southern Mexico events will showcase Levadura de Olla, an Oaxaca-based restaurant noted on the LATAM 50 Best Restaurants 2024 list. The program focuses on ancestral cooking techniques and the region’s traditional ingredients, presented through thoughtful, heritage-driven dishes.

Northern Mexico (May 8–10)
Northern Mexico programming brings creative cuisine from MICHELIN-starred Restaurante Pangea in Monterrey, presenting inventive dishes that reflect the culinary identity of Mexico’s north.
Eastern Mexico (May 22–24)
Eastern Mexico weekend highlights Ku’uk of Mérida, celebrated among The World’s 50 Best Restaurants 2024. The menu will feature contemporary Yucatecan cuisine that blends regional ingredients with modern culinary approaches.
Each weekend begins with light bites and an interactive cocktail hour featuring wines from Guadalajara’s Vinos Boutique. Featured chefs and mixologists participate throughout the evening, offering guests context and commentary on the ingredients, techniques, and stories behind each course. These events are designed to be both educational and sensory, inviting visitors to experience Mexico’s culinary diversity through thoughtfully crafted menus and engaging presentations.
