Planning a trip to Paris this summer? Consider stopping at Moët & Chandon’s seasonal pop-up restaurant, Le &, located on the historic L’Orangerie estate in Épernay, roughly 80 miles from Paris. Open through the end of July, this luxury dining experience celebrates Champagne, gastronomy, and the release of Moët’s Grand Vintage 2006.

Renowned Michelin-starred chef Yannick Alléno collaborates with Moët & Chandon winemaker Benoit Gouez to present a multi-sensory menu that pairs inventive cuisine with exceptional Champagnes. The restaurant is organized into four distinct culinary spaces, each designed to highlight different aspects of taste, texture, and aroma:

  • 7 Salt Bar: A tasting that explores the influence of salinity on Champagne, presented through carefully composed appetizers. Examples include dim sum infused with pork extract and fregola sarda paired with shellfish, oyster, and cucumber extracts, demonstrating how salt and minerality shape flavor perceptions.
  • Cookooning Cellar: The main dining room centers on an open kitchen where guests can watch the chef at work. Signature dishes include pike terrine served in brioche with mushroom extract and a butter enriched by lobster coral, paired with Moët & Chandon Grand Vintage Collection 1985.
  • Blind Shot Room: In this sensory-deprivation setting, light and sound are minimized so diners can focus solely on the interplay between Champagne and food, heightening taste and aroma sensations for a unique tasting experience.
  • Delice Club: A contemporary lounge dedicated to desserts crafted by Chef Alléno, paired with Moët & Chandon Grand Vintage 1999 and Imperial Rosé, allowing guests to finish the meal with refined, Champagne-led sweet pairings.

Reservations are required and priced at €450 per person (approximately $610). There is a minimum booking requirement of four guests per reservation.
