Princess Cruises Enhances Dining with Michelin-Starred Chef onboard

Princess Cruises is introducing La Mer aboard its newest ship, Sky Princess. The restaurant is the creation of Chef Emmanuel Renaut, a three‑Michelin‑starred chef best known for Flocons de Sel in the French Alps. Sky Princess arrives in Fort Lauderdale in December to begin her inaugural Caribbean season.

La Mer brings a refined French bistro approach combined with ocean-inspired influences, expanding a culinary concept already offered on Majestic Princess. The menu pairs classic French technique with fresh ingredients and thoughtful modern touches designed for both intimate dinners and celebratory meals at sea.

Highlights on the La Mer menu include a beef filet mignon served with sweet onion sauté, red wine jus and hand-cut fries; red snapper with scallop mousseline, accented by lobster morsels and a lemongrass lobster sauce; and a dessert of chestnut and blueberry gel with vanilla cream bavarois. Each dish reflects an emphasis on quality ingredients, precise execution and balanced flavors.

“It’s been an honor to collaborate with Chef Renaut again to develop a fresh and new menu for La Mer on Sky Princess and showcase his authentically crafted French dishes for the first time to our North American guests,” said Rai Caluori, executive vice president of guest experience and product development for Princess Cruises. “Chef Renaut’s culinary artistry and passion to deliver an unforgettable French dining experience at La Mer will be savored by each Sky Princess guest who delights in his exquisite fresh dishes.”

Chef Renaut commented on the expansion: “I’m delighted to introduce La Mer to more Princess Cruises guests aboard Sky Princess. The new La Mer dishes I’ve designed for Sky Princess are inspired to satisfy every palate by bringing retro French classics and blending favorite ingredients with fresh and unique touches to make each dish memorable.”

La Mer on Sky Princess aims to offer a balanced dining experience—rooted in French tradition yet contemporary in presentation—making it a standout specialty option for guests seeking elevated cuisine during their Caribbean voyage.
