Continuing its commitment to thoughtful travel experiences, Hotel Las Torres recently opened Pionero Bar, promoted as Chile’s first fully sustainable bar. Led by award-winning bartender Federico Gil, the bar blends contemporary mixology with deep respect for local ingredients, regional landscapes and eco-conscious methods. Gil, originally from Uruguay, presents cocktails that highlight calafate (a native berry whose flavor resembles an exotic blueberry), medicinal plants and locally produced spirits. His presentations combine showmanship with education, guiding guests through the careful preparation and stories behind each drink.

The hotel offers a broad range of activities—hiking, horseback riding and guided explorations that reveal Patagonia’s dramatic landforms, wildlife and sweeping vistas. After a day outdoors, Pionero Bar is a natural complement, providing panoramic comfort and refined flavors. Gil also leads an educational session called The Art of Sustainable Mixology, where he explains the inspirations and techniques behind signature drinks such as Calafate Breeze, Patagonian Fire and Legend of the Calafate. He discusses how mixology can support sustainability, and home bartenders often consider his tips and techniques among the most memorable takeaways from a stay.

Guests interested in local brewing traditions can sample Pionera, a house-made beer fermented in a small cabin beside the bar. Like many of the cocktails—including the Calafate Sour—the beer pairs well with dishes from executive chef Yann Yvin, who brings French culinary training to Patagonia’s flavors. The hotel also produces Tierra Paine Gin, distilled with 18 botanicals from the hotel’s regenerative garden and made using an ancestral clay process with glacial water from nearby Cerro Paine waterfalls. A varied selection of Chilean wines is on offer, alongside popular international spirits and labels.
