Salt Hotels has expanded into the Midwest with the opening of The West Hotel in Minneapolis in 2023. Developed through collaborations with acclaimed local and international designers and hospitality experts, the hotel sits steps from the Mississippi riverfront in the city’s historic North Loop neighborhood.

The West Hotel offers 123 guest rooms housed in a modern structure that integrates four historic buildings, blending contemporary design with preserved architectural character. Rooms feature custom wooden cabinetry and furniture, expansive windows with city views, clean-lined furnishings, rich fabrics, well-appointed bathrooms and original commissioned artwork, creating a refined yet comfortable atmosphere.

The hotel lobby occupies a former brass foundry and serves as a social hub with communal workspaces, a fireside lounge, a library and a bar. Additional on-site amenities include a stone-cellar cocktail bar, a rooftop bar with an outdoor terrace, an outdoor dining patio and six flexible event spaces designed for meetings and private gatherings. As with other Salt Hotels properties, this location emphasizes intuitive service and design inspired by the local culture.

Culinary offerings are led by local James Beard Award-winning chef Tim McKee, who oversees the hotel’s signature restaurant featuring Basque-inspired cuisine. Emphasizing the flavors and ingredients of northern Spain—particularly San Sebastian—many dishes are prepared over charcoal to highlight depth and smoke. Chef McKee has also announced an upcoming Eastern Mediterranean–inspired bakery that will operate within the hotel, expanding dining options for guests and visitors.
Located in Minneapolis’s North Loop, The West Hotel combines thoughtful design, culinary creativity and a commitment to hospitality rooted in local culture, marking Salt Hotels’ first Midwest property and a notable addition to the city’s growing hospitality scene.
