The Pembroke, the hotel’s on-site restaurant, will feature a special Irish menu alongside its regular selections. Highlights include braised Hereford beef in Guinness with herb dumplings, Cashel Blue cheese with honey and walnut soda bread, and a Five Farms affogato served with Irish butter shortbread. A full Irish breakfast will also be available daily, offering guests a classic start to the day.
At The Doyle Bar, visitors can explore curated Irish whiskey tasting flights that include rarer bottlings such as Green Spot and Midleton Very Rare. Tastings are presented with an illustrated map of Ireland to help guests connect each dram with its regional origins. Pairings include classic combinations like Guinness and oysters or a warming Irish coffee. The bar’s Irish Wine Geese menu complements the whiskey program with global wine selections, from Napa Chardonnay to Chilean Pinot Noir.
Evenings in guest rooms and suites will carry a literary note: turn-down service during March will include a short poem or verse from renowned Irish poets such as William Butler Yeats and Seamus Heaney, adding a quiet cultural moment to the stay. Room rates during the month begin at $325.
