Rosewood Mayakoba, set on the shores of the Riviera Maya, Mexico, has introduced La Ceiba Garden & Kitchen, a 20,000-square-foot outdoor dining destination that celebrates regional ingredients and fire-based cooking. Designed as an interactive culinary space, the venue hosts cooking demonstrations, tastings and guided foraging, all centered on methods that honor Mayan tradition by preparing food over an open flame.
The garden supporting La Ceiba supplies a wide range of fresh produce and herbs, including passion fruit, cucumbers, tomatoes, spring onions, chives, guava, pitahaya, mango and several varieties of chiles. Chefs use these ingredients to craft a frequently changing menu that balances classic Mexican preparations with contemporary interpretations, ensuring seasonality and direct connection between garden and plate.
Adding to the sensory experience is the Garden Mixologist, an on‑site cocktail specialist who curates a seasonal drink program using herbs and produce from the garden. The resort also macerates select tequilas in-house with fresh botanicals to complement the food offerings and highlight regional flavors in both cocktails and pairings.
La Ceiba’s opening aligns with Rosewood Mayakoba’s Sense of Taste initiative, a culinary program that invites guests to explore the Riviera Maya’s gastronomic heritage. As part of this initiative, Epicurean Encounters offer immersive outings to nearby farms and workshops with local artisans, giving visitors hands-on exposure to the ingredients and techniques that inform the property’s cuisine.
La Ceiba Garden & Kitchen is available to guests three evenings a week from 6:00 to 10:30 p.m. and can be reserved for private events, providing a scenic and authentic setting for intimate dinners, culinary demonstrations and celebratory gatherings.
