When it comes to beer, brewers in The Czech Republic take their craft seriously. At Pivovarský dvůr Zvíkov (Brewery Zvíkov), located about an hour from Prague in the village of Zvíkov, co-owners Josef Valenta and Michal Voldrich follow centuries-old brewing traditions linked to the nearby Zvíkov Castle. They combine malt, hops and water with careful technique to create distinctive beers. The swan on the label and the Golden Swan beer range pay homage to an emblem discovered at the castle’s medieval brewery.
Valenta believes beer has its own terroir: the origin and quality of raw ingredients matter. “Just like winemaking,” he says, “where hops and malt are grown influences the final product. People talk about the water, but any experienced brewer will tell you it’s the quality and provenance of ingredients plus the brewmaster’s craft that make the difference.”
Brewery Zvíkov does not export its beers. Every beer—ranging from lush unfiltered lagers to ales and stouts—is brewed primarily for the brewery’s restaurant and small on-site hotel, intended to be enjoyed with dishes like meats grilled over open flames and other Czech specialties. There is one notable exception: an archival dark lager bottled at 26 percent alcohol. Despite its strength, it drinks smoothly, more like a fine port. This special lager is produced in limited, numbered bottles and can be purchased only in person at the restaurant.
The brewery’s hotel has fifteen rooms and modern conference facilities, making it a convenient base for visitors who wish to extend their stay, attend a tasting or plan a research visit. The intimate setting allows guests to experience the beer where it’s made and to pair fresh beer with regional cuisine.
