To mark the occasion, the hotel will host une petite fromagerie from 4–8 p.m. in its signature restaurant, Gaby Brasserie Française. Featured cheeses include Bucheron, a goat’s-milk cheese from France; St. Stephen’s, a cow’s-milk triple cream from New York; Brebirousse d’Argental, a sheep’s-milk cheese from France; Comté Saint Antoine, a cow’s-milk cheese from France; Fourme d’Ambert, a classic French blue made from cow’s milk; and Tarentaise, a cow’s-milk cheese from Vermont. Guests dining in Gaby Brasserie Française and patrons at Gaby Bar will receive a complimentary brie en croûte accompanied by a four-red-fruit jam.
