Upon arrival, diners are presented with a seasonal multicourse tasting menu that can be paired with an optional sake flight to complement the savory selections. The full experience lasts approximately 2.5–3 hours, guiding guests through a carefully paced culinary journey.
The menu features items such as Dashi Dare Yaki, Niku Bako, and Kanmi, among others, but the centerpiece is unquestionably the authentic Japanese A5 Wagyu. Each member of the staff is well versed in Wagyu handling—skilled in cutting, preparing, and presenting the beef to highlight its texture and flavor. Complementing the premium cuts are handcrafted sauces and small seasonal dishes made with locally sourced ingredients.

Each table is equipped with a submerged, ventilated grill that allows guests to witness the final cooking stages. These grills sear the beef quickly to the ideal temperature, locking in rich flavors and an exquisite mouthfeel, while adding an interactive element to the meal.

Beyond the food, Nikutei Futago focuses on atmosphere and hospitality. The interior offers a retreat from the city bustle, with private rooms featuring Shoji sliding doors, semi-private spaces with Noren linen curtains, and a serene Zen garden reserved for guests. The design and service work together to create a calm, immersive dining experience where guests feel engaged in every step of the meal.
