Frenchman’s Reef Names Executive Chef and Reveals New Culinary Concepts Ahead of Resort Opening

Opening in spring 2023 on St. Thomas, Frenchman’s Reef has announced executive chef Greg Smith and the culinary lineup for its two new resorts: Westin Beach Resort & Spa and Morningstar Buoy Haus Beach Resort, an Autograph Collection Hotel. Together the properties will feature nine signature restaurants and lounges led by Smith.

A graduate of the Art Institute of Los Angeles, Smith brings hotel culinary experience from Sea Island, Four Seasons Nevis and The Ritz-Carlton, San Juan. Under his direction, the resort’s dining program will emphasize locally sourced seafood and seasonal ingredients while offering a variety of dining styles.

The dining collection spans casual beachfront spots to refined table service, each concept designed to complement the island setting:

Sugarfin is an indoor-outdoor venue featuring sushi and Caribbean-Asian inspired dishes in a relaxed, seaside atmosphere. Luna Mar focuses on Mediterranean flavors with a menu built for shared plates and coastal dining. Isla Blue serves inventive island-inspired cuisine and includes a private dining room for intimate gatherings. Sandbar is an oceanfront bar offering classic and tropical cocktails in a laid-back setting.

More casual and family-friendly options include Salt Shack, which offers approachable tacos, burgers and sandwiches, and Shorebird, a breakfast-focused venue with multiple food stations and a dedicated barista. Edge Bar features panoramic views from a swim-up bar and private cabanas, serving cocktails and light lunch items. Tide Pool Cabanas & Bar provides poolside service with private cabanas, cocktails and small plates. Palm Court creates a relaxed vibe with hammocks, seating areas and Caribbean-style food and beverage huts for casual meals. Frenchman’s Roast rounds out the offerings with coffee, fresh juices, grab-and-go bites and sundries for guests on the move.
