Business-class passengers on selected Singapore Airlines flights across Asia can now enjoy a refined in-flight Chinese dining experience called Shi Quan Wei Mei. Developed by the airline’s International Culinary Panel, the menu highlights traditional cooking techniques and seasonal, locally sourced ingredients to deliver authentic Chinese flavors at altitude.
The multi-course offering features carefully balanced dishes, beginning with appetizers such as a spicy tofu and beef salad. Main courses include options like braised pork belly in a tangy pickle sauce, accompanied by vegetable sides such as pumpkin with scallion oil and marinated cucumber. Desserts follow with comforting Chinese sweets, including malva nut soup and snow fungus soup.
“The introduction of Shi Quan Wei Mei underlines Singapore Airlines’ commitment to innovation and the constant enhancement of our in-flight products and services,” said Yeoh Phee Teik, acting senior vice president for customer experience at Singapore Airlines. “By using locally sourced, seasonal ingredients, we are pleased to offer our Business Class customers an authentic Chinese dining experience that is both wholesome and flavorful.”
Chef Zhu Jun, a member of the airline’s International Culinary Panel who led the menu development, explained the design philosophy: “Shi Quan Wei Mei focuses on the innovative use of the freshest seasonal ingredients to showcase the essence of Chinese food culture. We hope Singapore Airlines customers will appreciate the delicate balance and rich heritage reflected in these dishes.”
