Opening in March, this intimate luxury property offers 19 rooms and reflects a careful preservation of local architectural character. Italian architect Pino Brescia contributed to the restoration, preserving features such as exposed stone walls, whitewashed brick, antique furnishings, and an authentic olive mill and press. The property also includes a lush garden and a broad, arched pergola ideally suited for weddings and other events.

Le Carrube restaurant is notable for being the only exclusively vegetarian restaurant in Puglia, drawing on the region’s abundant produce as well as herbs and vegetables grown on the grounds. The menu emphasizes seasonal, locally sourced ingredients and includes dishes such as red lentil burgers with artichoke purée and ricotta-and-basil meatball-style preparations, alongside plates built around regional grains, fresh fruits and vegetables. This focus on plant-based, carefully composed cuisine complements the property’s emphasis on authenticity and local traditions.

The accommodation mix at Masseria Le Carrube comprises seven suites and 12 guest rooms, each equipped with modern comforts including mini bars, LED televisions, WiFi and air conditioning.
