Arrival/Check-in: I drove from Lisbon to Évora in about an hour and a half, approaching the town’s walls before heading to Convento do Espinheiro Hotel & Spa. On arrival, staff members Paul and Nuno greeted us, took our luggage and parked the car. Their warm, attentive welcome felt like arriving at a private residence and set the tone for a relaxed stay. After check-in the hotel staff chauffeured us to local sights, so the car wasn’t needed for the remainder of the visit.
Check-in was quick and pleasant, and we were shown to two connecting rooms, Nos. 210 and 207, which together form the Garcia des Resende Suite. The hotel occupies a former convent, and its architecture retains many attractive and authentic features. Former monks’ cells have been combined to create spacious guest rooms and suites. The grounds extend across several acres and include a beautifully restored 15th-century chapel that was carefully renovated.
Guest Quarters: The suite was elegant and comfortable. A generous entrance hallway with a round table led to a half-bath on the left and a sitting area on the right, where we relaxed, read and watched TV. From that room a spectacular patio opened onto the grounds. The patio, roughly 35 by 16 feet, featured a stone table and bench and was an ideal spot to work on a laptop or enjoy fresh air. The master bedroom sat beyond a short corridor and offered excellent views, a king-sized bed, night tables, a chest of drawers and a cozy chair. The master bathroom was spacious and included both a separate shower and bathtub. Modern touches such as an electronically controlled heated toilet seat and high-quality Bulgari toiletries, neatly presented with a shaving kit and other amenities, completed the accommodation.
Services/Amenities: Dining at Divinus Restaurant, set in an ancient wine cellar, was a highlight. The chef focuses on regional cuisine and showcases local ingredients, complemented by a thoughtful wine list; we frequently enjoyed a Portuguese rosé with our meals. The Diana Spa is an excellent place to relax—my final-day massage was exceptional and made me wish I could stay longer. My daughter enjoyed a facial and a manicure. The wine bar occupies the hotel’s original 15th-century Gothic water reservoir, another example of how historic spaces have been repurposed with care. The gardens are attractive and the outdoor pool is inviting, although cooler-than-expected weather during our visit meant guests preferred the indoor pool. The hotel’s close proximity to Évora’s walled historic center, a UNESCO World Heritage site, is convenient for sightseeing, and several nearby wineries—including those associated with monastic traditions—offer additional attractions.
The Experience: I wished for more time to explore the property and its surroundings. A guided tour with the general manager, Dinis Pires, provided fascinating insight into the convent’s history; the chapel tour was particularly memorable.
