There’s a fresh addition to the table at Rome’s iconic Hotel Hassler Roma: a vegetarian tasting menu at its panoramic, Michelin-starred restaurant Imàgo. The new menu, crafted by Chef Francesco Apreda, is available through the end of the summer.
Apreda draws inspiration from his native Naples, his adopted city of Rome, and his time in India and Japan. The vegetarian offerings highlight seasonal, locally sourced produce paired with Asian-inspired flavors. Dishes include soy-scented eggplant, lemongrass-infused white asparagus, lime dust, kumquat compote and shiitake mushrooms, all combined to showcase texture and balance.
“My wife is vegetarian, and I have spent extensive time in India … where I learned a great deal about how enjoyable vegetarian cuisine can be,” Apreda said. “It’s all in the ingredients and the preparation, and I am confident Imàgo’s new menu will be a great success.”
Among the inventive creations on the tasting menu are combinations such as broad beans with lime dust, a breaded zucchini and goat cheese cutlet, and beer-flavored spring onions paired with kumquat compote. Each course is designed to emphasize fresh flavors while exploring international techniques and seasoning.
The vegetarian tasting menu is priced at 120 euros per person. It offers diners a chance to experience Imàgo’s refined approach to vegetarian dining, presenting a sequence of thoughtfully composed plates that celebrate produce and culinary craftsmanship.
