Every morning Chef Gaz Herbert, culinary director of Todos Santos Boutique Hotel, walks to Agricole Tienda de Campo, a 37-acre farm cooperative just 12 minutes away, to select the produce he will use in the hotel’s restaurant that evening. He wanders through fields of sweet strawberries and beds of vibrant vegetables, choosing the freshest organic ingredients that will shape the nightly menu.
This hands-on approach reflects how a boutique hotel in the town of Todos Santos—on Mexico’s Baja California Peninsula, backed by the Sierra de la Laguna—has developed a genuine farm-to-table culinary program. The hotel also hosts a visiting chef series that has already welcomed acclaimed chefs from New York City.

In February, Chef Flynn McGarry from New York visited, and in early May Mexican chef Lucho Martinez, now at New York’s Em, took part in the program. More notable chefs are scheduled to join, bringing diverse influences that benefit both hotel guests and the local community.
The hotel’s restaurant, 1890—named for the year the building was constructed—practices true farm-to-table dining, with most produce harvested the same day it’s served. Guests who want a closer look at the source of their meals can join a farm tour at Agricole led by Chef Gaz.
Chef Gaz’s menu highlights seasonality, color and freshness. Starters might include simple yet striking salads such as Josper-charred fennel with burrata, orange chili oil and roasted pecans. Mains could feature house-made ravioli with ripe heirloom tomatoes, ricotta and fresh basil. Desserts often celebrate Agricole’s famous strawberries, such as a strawberry-and-almond tart that showcases their sweetness.

Todos Santos has a long agricultural history. In the late 1700s and 1800s Jesuit settlers cultivated fruits and sugar cane and established trade routes with miners and traders from Sonora and Sinaloa, exchanging produce for fabrics, materials and provisions. The building that now houses 1890 was once a rural estate owned by a Spanish countess. After extensive revitalization, Todos Santos Boutique Hotel reopened in February 2024 under new ownership.
Known for its thriving arts scene, Todos Santos features galleries to explore and the Profesor Néstor Agúndez Martínez Cultural Center, a former school that now includes a local history museum. Beaches like San Pedrito and Los Cerritos—about a 15-minute drive south—are well regarded for surfing.
The hotel offers ten luxurious rooms, many adorned with hand-painted murals. Amenities include a swimming pool, WiFi, a wet bar, valet service and additional hospitality features designed to enhance a relaxed stay.
