Celebrity chef and former Top Chef contestant Marcus Samuelsson will open a two-month pop-up restaurant, Samuelsson at HP, at the Fairmont Hamilton Princess in Bermuda. Running from June 3 to Aug. 3, the pop-up previews Samuelsson’s full restaurant slated to open at the hotel in May 2015. The menu is designed to honor Bermudian culture and history and will be executed by chef de cuisine Leo Marino and chef de cuisine Justin Levine, both from Samuelsson’s acclaimed Red Rooster Harlem in New York City.
“I’m excited to create new flavors inspired by the rich, vibrant culture and history of Bermuda,” Samuelsson said. “From fresh-caught local fish to a variety of Caribbean and Portuguese ingredients and traditions, there is a wealth of inspiration to bring to the table.”
While celebrating Bermuda’s heritage, Samuelsson’s signature offerings emphasize fresh seafood and local flavors. Appetizers and small plates include rockfish crudo with pickled cherry tomato, radishes and jalapeño oil; fish chowder croquettes with rum aioli; and paddlefish caviar tacos with wasabi sour cream and red onion. Larger entrees feature dishes such as grilled head-on shrimp with ginger-scallion sauce, sweet soy and cilantro, and a mustard-crusted lamb rack with red wine and coffee-caramelized pearl onions.
Born in Ethiopia and raised in Sweden, Marcus Samuelsson is the chef-owner of New York’s Red Rooster Harlem and its sister speakeasy and jazz lounge, Ginny’s Supper Club. His cooking often blends global influences with local ingredients, making the Bermuda pop-up a natural extension of his culinary approach.
