New Michelin-Starred Menus Launched in Air France La Première and Business Class

Travelers flying Air France’s premium cabins can enjoy newly designed Michelin-starred menus through October. French chefs Michel Roth and Anne-Sophie Pic have created refined dishes for La Première and long-haul business cabins departing from France, using carefully selected meats and fish, seasonal produce and high-quality vegetarian ingredients.

La Première Cabin

Michelin-starred chef Michel Roth designed the La Première menu, which showcases classic French flavors and elegant preparations. The service begins with an appetizer of Caviar Sturia served with a pancake and smoked fish cream, followed by a starter of lobster medallion with asparagus and raspberry vinaigrette. The main selection rotates through eight entrées that will be featured progressively. Examples include beef with foie gras, asparagus and mushrooms; veal with seasonal vegetables; chicken with sweet pepper tart and stuffed zucchini; chicken with olives, black truffles and macaroni gratin; quinoa with summer vegetables for a vegetarian option; truffled polenta with green vegetables and mint pea coulis; brill fillet with green vegetables and mussels; and shrimp served in a rich lobster sauce.

Business Cabin

Triple Michelin-starred chef Anne-Sophie Pic curated the long-haul business cabin menu, offering eight thoughtful dishes that balance texture and seasoning. Selections include braised beef with potato mousseline, plum chutney and tarragon breadcrumbs; roast chicken with spelt risotto and courgettes scented with green cardamom; saithe accompanied by seaweed, lovage sauce, Camargue red rice, spinach and fennel compote; artichoke barigoule with creamy polenta, smoked vanilla Burrata and tangy tomato coulis; poached saithe with a curry and coconut milk sauce served with black rice; beef stew enriched with coffee and sweet onion consommé; chicken with tonka bean sauce and creamy polenta with mushrooms; and seashell pasta with chard, lemon coulis, a lightly smoked goat cheese cream and roasted pumpkin seeds.

 

Air France has committed to sourcing only French meat, dairy products and eggs on all flights from Paris across every cabin. This initiative is part of the airline’s broader sustainability and culinary quality efforts.
