Unbound Collection Hotel Opens in New Orleans: Luxe Riverfront Stay

The Eliza Jane, an Unbound Collection by Hyatt property, opened in New Orleans last month, located two blocks from the French Quarter. Housed across nine connected historic warehouse buildings, the new hotel offers 196 guestrooms arranged around a 2,000-square-foot interior courtyard that celebrates the site’s industrial past while delivering modern comfort.

The property’s design pays homage to the buildings’ original uses, including the Peychaud Bitters factory and the Gulf Baking Soda Company, weaving historical details into a contemporary hotel experience. Named for the publisher of The Daily Picayune—the first woman to publish a major metropolitan newspaper in the late 19th century—The Eliza Jane balances local storytelling with refined hospitality.

“New Orleans is one of the most exciting places in the country, and we are thrilled to bring a fresh take on the city’s hospitality scene with the opening of The Eliza Jane,” said Travis Tague, the hotel’s general manager. “The property fully embraces our city’s spirit, and we look forward to offering personalized and genuine New Orleans experiences to our guests.”

Guest accommodations include 50 suites and 12 signature suites, each featuring a curated palette of rich colors, leather headboards, bespoke accent furniture, and brass and walnut details. Many rooms retain original architectural elements such as exposed brick walls and ceiling beams, creating an authentic sense of place. Bathrooms are pared-back and elegant, with white subway tile and choices of teal vanities or Carrera stone, while suites include full wet rooms and freestanding tubs for a more indulgent stay.

At the heart of the hotel, the interior courtyard preserves original brickwork and blends it with lush greenery and Spanish-inspired architectural touches. The courtyard links the restaurant and guest spaces, providing relaxed seating and an inviting atmosphere; it is scheduled to open in June.

Dining at The Eliza Jane centers on two distinct venues: Couvant, the hotel’s signature restaurant, and The Press Room, a lounge styled like a comfortable living room. Couvant occupies the former bitters factory and juxtaposes industrial-modern finishes with classic New Orleans and French influences, creating a refined yet approachable dining experience. The Press Room offers a more intimate setting, featuring an eclectic collection of antiques, a marble fireplace, and custom brass lighting that reinforces the hotel’s attention to material quality and historical detail.
