NIZUC Resort & Spa and Dom Pérignon have unveiled an exclusive Dom Pérignon wine cellar at Ramona Restaurant, introducing immersive sensory experiences that bring the house’s iconic champagnes to life through private tastings, paired meals and curated events.
Under the leadership of Chef Sylvain Desbois, Ramona Restaurant blends classic technique with inventive flavors and locally sourced ingredients. In collaboration with Dom Pérignon’s wine-making team, led by winemaker Vincent Chaperon, Chef Desbois will create menus and experiences designed to highlight the nuances of each champagne. Private tastings will showcase a range of Dom Pérignon expressions, while paired lunches and dinners will match dishes to offerings such as Dom Pérignon Vintage Blanc, Vintage Rosé and Plénitude 2. The program of events is designed to deepen appreciation for the Dom Pérignon house and its approach to winemaking. Guests at NIZUC can also tour the new wine cellar.
