Chef Ollie Dabbous Joins St. Regis Maldives Vommuli Guest Chef Series

The St. Regis Maldives Vommuli Resort has welcomed London-based Chef Ollie Dabbous as the latest guest in its acclaimed Guest Chef series.

Chef Ollie Dabbous is executive chef and co-founder of HIDE, a Michelin-starred restaurant in London’s Piccadilly that earned its star within six months of opening. He previously led the critically acclaimed Dabbous, a restaurant celebrated for its pared-back fine dining and industrial-chic interiors.

 

On April 16 and 18, Chef Dabbous will present a curated lunch and dinner at The St. Regis Maldives Vommuli Resort. The specially designed menu showcases a balance of fresh island ingredients and refined technique, with dishes such as iced watermelon gazpacho, pumpkin compote, local tuna tartare with lime leaf vinaigrette, grilled lobster with saffron and lemon verbena labneh, sand-baked Wagyu beef, and kaffir lime pie. Each dining experience is priced starting at $295 per person.

 

This residency reflects the resort’s ongoing series of guest chef events, which bring celebrated culinary talents to the Maldives for limited engagements, giving guests access to exclusive menus and memorable dining moments in a striking island setting.
