Anam Cam Ranh Resort Launches Exciting New Dining Experiences

At The Anam Cam Ranh in Vietnam, The Colonial— the resort’s fine-dining destination—has unveiled a refined degustation menu that highlights unusual Vietnamese ingredients interpreted with French technique. The restaurant’s reputation draws many guests to the resort specifically for its cuisine.

Featuring an open kitchen, a grand piano and a courtyard shaded by mature gardens, The Colonial now presents a six-course tasting menu developed by executive chef Duy Anh Nguyen, with optional wine pairings chosen to enhance each course.

The tasting begins with amuse-bouches that introduce contrasting textures and flavors: a giant clam paired with sausage and daikon jams, glazed with caramelized miso and finished with herbs and salmon roe, alongside a Vietnamese-style beef tartare accented by caramelized cashew, fish sauce, crispy garlic and betel leaf.

An entrée of salted mackerel follows, presented with fermented star fruit, a tangy sour broth, chrysanthemum and coriander oil. The first main course features a 14-day dry-aged duck breast accompanied by pumpkin flower, black apple amazake and a brown butter-fermented tofu sauce, marrying richness with delicate floral notes.

To refresh the palate, guests enjoy a sorbet of mango and passion fruit served with an oolong tea cordial and yellow raisin. The second main course is a 150-day black Angus tenderloin plated with eggplant purée and a beef jus infused with house-made chili and basil, served alongside fragrant Vietnamese ST25 rice blended with sweet corn and green beans.

The meal concludes with desserts that blend regional and international influences: tahini ice cream with sesame crisps, caramelized hajikami and coconut milk sauce, followed by a classic Nha Trang tofu pudding. Optional wine pairings draw from selections in Australia, France and Italy to complement each dish.

Located off the resort’s open-air lobby beside Saigon Bar, The Colonial serves a premium European buffet and an à la carte breakfast menu, and functions as the club lounge for guests staying in premium suites and villas during daytime hours.

Guests staying in Ocean View Pool Villas, Ocean Front Pool Villas, Honeymoon Villas, Terrace Sea View Suites and Anam Terrace Suites have access to the club lounge from 7 a.m. to 5 p.m., after which The Colonial transforms into the resort’s evening fine-dining venue.
