Grayson Hotel Opens in NYC with Stunning Skyline Views

Grayson Hotel opened earlier this month at 30 West 39th St., celebrating the turn-of-the-century industrial spirit of New York and the cross-cultural culinary influences that followed. The hotel’s industrial-chic character is embodied by a dramatic two-story steel spiral staircase that links street level to an indoor-outdoor dining destination on the second floor. Developed, owned and managed by Fortuna Hotel Collection, the newly constructed property marks The Unbound Collection by Hyatt’s first New York City location.

The hotel features 296 guestrooms, each showcasing an art collection curated by Indie Walls. The global art consultancy selected works that reference New York’s historic landmarks and industrial past, creating a thoughtful, inspiring atmosphere throughout the property.

Room and suite décor integrates vintage books and period objects that tell the story of Grayson Hotel and ground guests in the neighborhood’s character. Thoughtful in-room touches include a butler-style minibar service offering to-go craft cocktails, snacks and beverages; Lather bath and body products in a bamboo lemongrass scent; custom hooded bathrobes; and a bronze statue of the hotel mascot, Grayson the French bulldog.

Culinary programming at Grayson is led by acclaimed New York hospitality group Apicii alongside an experienced team that includes chief culinary officer Jonathan Benno of Michelin-starred restaurant Benno and beverage director Kyle Tran. Drawing on expertise in Mediterranean and Mexican flavors, the hotel’s food and drink concepts are designed to serve as an urban oasis for guests and visitors.

On the ground floor, Harta operates as an all-day pan-Mediterranean brasserie. The menu is the result of a collaboration between Jonathan Benno and executive chef Mark Zuckerman, with dishes that emphasize seasonal ingredients and bold, layered flavors. Signature offerings include artichokes paired with red kuri squash and rainbow carrots; brodette, a generous seafood stew in a tomato-saffron broth; and black bass accompanied by artichokes, fennel, radish and a vadouvan-infused broth.

Grayson Hotel positions itself as a neighborhood destination that blends historical references with contemporary comfort.
