This refresh is the studio’s second collaboration with the hotel and preserves the restaurant’s distinctive carousel-inspired character while introducing contemporary French design details.
First opened in 1984, the Rotonde Brasserie has long been known for its whimsical carousel motif. The renovation carefully retained those original touches—most notably the sculpted white horses that adorn the walls—while updating the surrounding finishes and lighting to create a warmer, more modern atmosphere. Above those horses, diners can still enjoy painted ceilings that switch between bright blue daytime skies and a twinkling starry night to match the time of day.
Materials and craftsmanship were central to the project. The team prioritized local production: both the labor and the components used in the renovation are reported to be 95 percent locally sourced. That emphasis on regional supply and skilled artisans helped preserve the character of the space while ensuring durable, high-quality results.
On the culinary side, the hotel has enlisted Michelin-starred chef Virginie Basselot to oversee the menu, aiming to deliver an original dining experience that complements the refreshed décor. The combination of thoughtful design, local materials, and elevated cuisine positions the Rotonde Brasserie as a renewed destination for both hotel guests and visitors to Nice.
