Renowned chef Charlie Palmer has opened three distinct dining venues at the historic Knickerbocker Hotel in New York, located on the southeast corner of 42nd Street overlooking Times Square between Broadway and Bryant Park. The new offerings include Charlie Palmer at The Knick, the hotel’s signature full-service restaurant and bar; JAKE’s @ The Knick, a ground-level espresso bar; and St. Cloud, an expansive 7,500-square-foot rooftop bar and terrace scheduled to open in spring 2015.
“Developing the restaurants and integrated food-and-beverage spaces at The Knickerbocker has been a passion project for me,” said Chef Charlie Palmer. “The landmark hotel, Times Square location and historic context inspired our team over the last 16 months as we created distinct dining and drinking experiences across the property. Each outlet — Charlie Palmer at The Knick, JAKE’s @ The Knick, St. Cloud, and Aureole — was designed to serve the diverse mix of guests who pass through the hotel’s doors.”
Situated on the fourth floor, Charlie Palmer at The Knick provides a glamorous dining atmosphere and menus reflecting Palmer’s progressive American cooking. The fourth floor also houses The Salon, a private event space that accommodates up to 250 guests, making it suitable for corporate functions, receptions and special events.
Charlie Palmer at The Knick is well suited for business breakfasts and offers customizable breakfast caddies with fresh juices, bakery items, coffee and tea. Lunch highlights locally sourced, seasonal dishes, while dinner shifts to a more intimate experience and includes signature items such as Scotch quail eggs with popcorn shoots, Dijon and pancetta aioli; grilled romaine hearts with garlic breadcrumbs, shaved pecorino and honey-lemon emulsion; and The Knick Burger, a dry-aged custom-blend patty topped with short ribs and Irish cheddar on a brioche bun made by Aureole baker Peter Edris. The restaurant also presents The Knick Test Kitchen, a daily specials program featuring two to three meat-focused preparations such as veal head cheese and flash-seared sweetbreads.
Serving as a secondary entry to the hotel, JAKE’s @ The Knick welcomes guests beneath a barrel-vaulted ceiling that creates a relaxed refuge for locals and visitors alike. Open throughout the day, JAKE’s offers coffee and espresso roasted by Brooklyn Roasting Company alongside artisanal flatbreads from Sullivan Street Bakery and a selection of grab-and-go and light dining options.
Opening in spring, St. Cloud is a highly anticipated rooftop destination offering a seasonal menu of small plates paired with a progressive cocktail program. The 7,500-square-foot terrace will include a signature cigar lounge curated by tobacconist Nat Sherman and the Waterford Crystal Lounge, a refined area featuring custom furniture by British designer Jo Sampson and Waterford bar and stemware, creating an elegant setting for cocktails and skyline views.
