Hotel Indigo Grand Cayman is set to open on May 8. In advance of its debut, the new resort from IHG Hotels & Resorts and Dart Properties has revealed a varied lineup of restaurants and bars designed for both guests and locals.
“Hotel Indigo Grand Cayman blends refined touches with local character to deliver a memorable stay,” said Steven Andre, general manager of Hotel Indigo Grand Cayman. “Our culinary vision focuses on creating a destination that moves away from conventional dining, offering explorative, non-linear experiences for visitors and the community.”
The resort’s culinary program and food hall concept is led by award-winning chef Massimo De Francesca. The dining venues emphasize fresh, locally influenced ingredients and a range of regional flavors. Offerings include:
